Chris Shepherd has a long relationship with Spanish food. He ran a restaurant called Catalan Food and Wine prior to opening Underbelly, which was inspired by Spanish cuisine with Houston influences. In September 2017, he’ll open One Fifth Romance Languages, featuring the food of Spain, France and Italy for one year. So when his good friend and fellow Food & Wine Best New Chef Katie Button released her cookbook, Cúrate: Authentic Spanish Food from an American Kitchen, Chris immediately invited her to Houston to cook with him.
In her cookbook, the elBulli-trained chef offers a peek inside the kitchen of her award-winning restaurant, Cúrate. The book features 125 recipes celebrating the vibrant flavors and broad appeal of Spanish food, showing readers how to re-create classic Spanish dishes and adapt them using American seasonal ingredients.
Katie and Chris will cook a Spanish feast together at Underbelly. Expect Katie’s interpretations of authentic Spanish dishes, and Chris will bring back dishes from Catalan (foie gras bon bons, anyone?) and experiment with new ideas for One Fifth Romance Languages.

Katie Button is one of the new stars of the global food world—a recipient of Food & Wine magazine’s 2015 Best New Chef Award and finalist for James Beard’s 2014 Rising Star Chef Award. In 2008, she left a promising career as a neuroscientist to apply her creativity and precision in professional kitchens. She was the first American to wait tables at elBulli in Spain, and was later offered a kitchen internship there. Now she has two of her own restaurants: Cúrate, an award-winning Spanish tapas bar in Asheville, North Carolina; and Nightbell, an American restaurant focused on local Appalachian ingredients with a craft cocktail lounge.
